Jose Lasso produces incredible coffees on his farms

and we are lucky to have this special release filter.

This coffee goes through a complex natural process where

multiple steps of fermentation are carefully conducted.

  • Ripe cherries are sorted and rested in tubs for 18 hours
  • Aerobically fermented in bags for 70 hours
  • Anaerobic fermented for 30 hours
  • Submerged in controlled water temperature for 18 hours
  • Dried on raised beds
